Adam Smith College Chef Transforms into Celebrity Caribbean Cook

Adam Smith College Chef Lecturer, Eadie Manson, travelled over 4,000 miles for his most recent appearance on popular STV show, ‘The Hour’ – leaving Fife for the Caribbean to stage his latest cooking extravaganza.

​Eadie flew to Barbados with the team from ‘The Hour’ to take part in the Celtic Festival which celebrates links between the Caribbean island and Celtic countries through festive music and culinary delights as well as highland and beach games.

During his four-day visit, Eadie cooked up a culinary storm by producing his own version of Barbados’ traditional dish, cou-cou and flying fish, by barbequing flying fish with roasted squash, followed by a play on haggis, neeps and tatties with a Bajun twist. He was also given a rum masterclass by the locals and even managed to squeeze in some cocktail making!

Eadie said: “I had a fantastic time in Barbados and was delighted to be asked to go. Not only did I get the chance to do some cooking but I also met the President of the Scottish Barbados Society, interviewed a historian about the Celtic connection in Barbados and met and interviewed Scottish folk singer, Eddi Reader, before she performed. It was a busy few days but great to be part of it.”

‘The Hour’, which is presented by former Pop Idol winner Michelle McManus, is Scotland's most watched teatime television show, attracting one million viewers per week to STV between 5 and 6 pm.

The show’s Series Producer, Tom Cara, commented: “It was fantastic to have an opportunity to take Eadie, one of the country’s most promising TV cooks, to Barbados and to squeeze in so much in the four days we were there.

“Eadie was superb in front of the camera and a great ambassador for the programme, the College and for Scotland. We’ve high hopes for him and who knows, he’ll maybe end up as Scotland’s very own Jamie Oliver! The Hour’s viewers got a real treat when the footage of Eadie cooking was aired last week on the show.”
