HNC Professional Cookery

SCQF Level 7

This programme provides the opportunity for students with catering experience to further develop their culinary and kitchen management skills to a higher professional standard. The course is led by highly-respected, national award-winning chefs, with a wealth of professional experience.

What You Study

  • Production Cookery – Hot and Cold Kitchen
  • Sweets and Desserts
  • Pastry
  • Food Classification and Purchase

Students are given the opportunity to develop further skills through competition work.

Duration and Attendance

One Year Full-time

Part-time, day release and evening attendance may also be available.

Students may be required to attend classes at both the Stenton Campus, Glenrothes and the St Brycedale Campus, Kirkcaldy.

Entry Requirements

One of the following:

  • NQ Professional Cookery to include 12 SQA units at Intermediate 2 or above
  • Industrial experience or other qualifications will be considered on an individual basis
